Maple Bacon Ginger Peach Crisp

|5||slices Cloverdale Maple Bacon|
|2||large fresh Apples, peeled, sliced thin|
|2||large fresh Peaches, peeled, sliced medium thin|
|1 1/2||Tablespoons flour|
|1||teaspoon Maple extract|
|1/2||cup granulated sugar|
|3/4||teaspoon ground Ginger|
|3/4||cup brown sugar|
|1/2||cup butter, softened|
|3/4||cup all purpose flour|
|1/4||teaspoon baking soda|
|1/2||cup Whole Rolled Oats|
|1 1/2||teaspoon ground cinnamon|
|1 1/2||teaspoons minced Candied Ginger|
Butter or spray with non stick cooking spray an 8x8 inch baking dish. Preheat oven to 350 degrees.
In a large skillet, fry the Maple bacon slices until crispy; drain on paper towels and crumble; set aside.
In a medium bowl, combine the apples, peaches, flour, maple extract, Bourbon, granulated sugar and ground ginger. Mix well and pour into the prepared baking dish.
Combine the remaining ingredients into the same medium bowl minus the minced Candied Ginger. Stir in half of the Maple bacon crumbles.
Sprinkle mixture over the apple-peach mixture.
Bake for 30 minutes until the apples are tender. Top with remaining Maple bacon crumbles and minced Candied Ginger.
Serve warm with Vanilla or Peach ice cream. Serves 4-6
You may replace the Bourbon with apple juice if you prefer.
